Digital Video and Interactive Media

One major advantage that eTextbooks posses over hard copy books is the ability to make the book interactive.  Flash media is a great example of interactive software that could be embedded in to eTextbooks.  Imagine a chemistry book where, in the reference tables, the periodic table was interactive.  This would allow you to bring up more specific information about each element just by touching it on the tablet.
If the tablet could access the internet, it then could allow users to watch a wealth of internet videos apart from ones that are embedded in the digital textbooks.  Tutorial videos are always a great educational tool and there are many many of them on youtube.  Animated demonstrations that students can manipulate and stop at their own speed, this way they can rewind and fast forward to accommodate their learning speed.
Overall, interactive media/technology rejuvenates students' interests in material they might have otherwise found boring.  It also allows students to learn in more customized and personal way.
